When Alice Waters decided to open a restaurant, she decided to use the name Panisse, the compassionate hero of filmaker Marcel Pagnol. They were "seeking to re-create the idea that life was lived close to the land, where food was produced by people who were sustained by each other and by the earth itself, where life and work were inseparable, and where the daily pace left time..." They tried to re-create a lifestyle, filled with beauty and sustenance, collaboration and friendships, beauty and harmony with nature, and simplicity in sophistication. Chez Panisse opened its doors forty years ago, and Alice Waters became an icon in the food industry. Alice Waters was the speaker for the CU Center for Women's Health Research in Denver, Coming Back To Our Senses:Nourishing the Next Generation. The take away from her talk was not only that food, the preparation and sustainability of food, should be the primary focus for living well but actually living well trumps food. How we live and where we live is truly as important to our well being as the food we eat, our homes are just as nourishing to our souls. Taking a moment to look back at some of your fondest memories or happiest times and you will see a home in that portrait. Our homes create the memories, nourish our families and friends and are the investmet that sustains our lives. If your current home does not nourish or sustain, it is time for a change. Housing prices are steadily climbing but still quite reasonable and interest rates are at record lows. Banks are lending, sellers are selling and rentals are scarce.
